Amanda - Amanda has got a recipe for you! In a large pot bring Yukon Gold potatoes to a boil in a mixture of water and chicken stock and cook for about 20 minutes. Use a ricer to 'mash' the potatoes (don't use a mixer - they might get gummy). Combine with buttermilk, butter, salt and pepper. Voila.
Chelsea - sweet potatoes, but please hold the marshmallows as that is an abomination!

Jackie's Thanksgiving Stuffing
10 ounces frozen chopped spinach, thawed
12 ounces plain sausage
1/2 cup butter
1 onion, finely chopped
4-5 celery stalks, diced
8-10 ounces white mushrooms, chopped
3 granny smith apples, peeled, cored and diced
3/4 cup pecans, chopped
1 cup craisins
small bunch of italian parsley finely chopped
1-2 tbsp Bell's Seasoning
1 tbs salt
1 tsp pepper
2 eggs beaten
1-2 bags cubed potato bread (12 ounces each)
1 bag cubed white bread (12 ounces)
32 ounce unsalted chicken broth
Pre-heat oven to 375. Ring out spinach until dry. In a skillet, saute sausage breaking up into pieces. Remove from skillet. In the same skillet melt butter and saute onion and celery until soft. Add mushrooms and cook another 3-4 minutes.
Stir onion mixture into sausage in a large bowl. Add apples, craisins, pecans, parsley, Bell Seasoning, salt and pepper. Add 1/3 of bread cubes and 1/3 of chicken stock. Gently combine, then repeat process until the mixture is moist.
Spoon mixture into a greased casserole dish. Cover and bake at 375 for 45 minutes.
